Choose your buffet menu for your event. We are a private caterer and we will provide a beautiful display of delicious food for you. The per person cost will vary depending on your selections and number of guests. We will be happy to help and discuss any options you may have. We serve groups of a minimum of 50 to larger weddings or Christmas parties of 300 guests.

From the Hoof


Prime Rib
Seasoned for 24 hours, slow slow cooked with wood or traditional slow roasted in our cookery. Accompanied with the rib’s aus jus and ol’timer style horseradish sauce. Tender and Yummy.

Steaks
Cooked on our outdoor grill, seasoned to your liking. Nothing better than a good steak cooked outside over the grill. Steaks typically available are Sirloins, New York, Rib Eyes, Strip Loins or just what- ever falls off the cow. BOURBON steaks are popular and delicious.

Ribs
Rubbed down and slowly smoked pork ribs cooked till tender and delicious. Try dipping the rib into the barbecue sauce or we can splash some on during cooking. Either way, it’s mouth watering good. Baby back ribs or Spare Ribs depending on market availability.

Slow Smoked and Cooked Whole Hog
Delicious and beautiful display for your buffet line. Very tender pork for your pulled pork options. Clients and guest rave over the whole hog

BBQ Pulled Pork Sandwich
Barbecue rub seasoned and cooked slow with the wood smoke background. Topped off with a tasty barbecue sauce and garnished with cilantro lime slaw. Served on a Brioche bun.

Pulled Pork Sandwich
Teriyaki marinated and seasoned pork and slow cooked under wood background. Served with the teriyaki sauce on a Brioche bun. Garnished with a pineapple and cucumber relish.

Tequila Pulled Pork Sandwich
A Southern rub of garlic, cumin, chile and secret spices, marinated with lime juice, coconut oil and of course, Tequila. Served with our Brioche bun. Garnished with a fresh cilantro lime slaw.

Western Meatloaf
Seasoned ground beef blended with country sausage and the fixin’s, and of course wrapped with smoked bacon! What a treat.

Grilled Ranch Burgers
Outdoor cooking is the only way to cook burgers straight from the grill. Seasoned beef made patty accompanied with your favorite toppings.

Barbecued Chicken
Marinated in barbecue sauce and then grilled or wood cooked/smoked till tender. Half, quartered, or individual portions cooked tender and juicy. Of course, barbecue sauce is splashed on.

Teriyaki Grilled Chicken
Homemade marinated single portions of chicken and grilled on our barbecue to perfection. The sweet teriyaki flavor and the barbecue match up well. Offered on skewers too.

Pig Marries A Chicken
Chicken thighs wrapped with smoked bacon. Rubbed with a sweet barbecue spice and wrapped with smoked bacon and then grilled on our barbecue until juicy delicious. What a treat.

Marsala Chicken
Very Popular. Juicy with a lot of flavor with this classic chicken entree. Breast or Quarter portion of seasoned chicken cooked with Marsala wine and homemade demi glaze sauce.
This is excellent with wild rice Pilaf.

Just Because We Can


Pioneer Barbecued Chili!
We start our chili with barbecuing/grilling the well-seasoned beef or pork roast straight on the grill. The unique flavor is transferred over to the Dutch oven where the magic happens over time with the chili spices and hidden secrets. Ground beef is another option. Beans are negotiable. Served of course with Cornbread with honey and butter.

Sides and Vittles


North Idaho Country Spuds
Mashed and Smashed and seasoned ready for butter or gravy or cheese. Garlic smashed is another option.

Cowboy Beans
Cooked slow , good ol’ ranch pinto beans blended with the cook’s spices, of course bacon and other good stuff.

Bakers
Sea Salted Idaho baked potatoes to your liking. Pile on your extras, butter, sour cream, bacon bits, scallions, cheese

Rice Pilaf
Cooked in chicken stock with onion, mushroom, a tad of wild rice.

Vegetables
Fresh Seasonal Corn on the cob, or green beans with almonds, or choose any other seasonal roasted favorite.

Country Cornbread
Home-style cornbread topped with of course corn. Choose muffin or pan. Butter and honey. Hmm.

Cold Stuff


Fresh Caesar Salad
Great Classic Romaine lettuce, garlic, anchovy, olive oil dressing with Parmesan cheese and croutons.

Arugula Pasta Salad
Very tasty and popular salad, a mix of smoked summer sausage, sun dried tomatoes, mozzarella cheese, Kalamata olives, blended with an olive oil and pepperocinis tossed with fresh Arugula greens and multi-colored penne pasta.

Fresh Garden Greens Salad
Mixed lettuce and other vegetables with a variety of dressings. Other toppings as requested.

Seasonal Fresh Fruit
Seasonal fruit mixed or displayed to your specifications.

Homemade Potato Salad
Salad made with Yukon potatoes, eggs, classic ingredients, and of course with bacon and ham.


Grandma’s Cole Slaw
Cabbage and dressing made fresh. Just like my Grandma made, Pioneer style.

Grub Starters

Prawns on Ice
Shrimp Prawns slow cooked, seasoned and chilled on ice. Choose your size of shrimp. Served with traditional cocktail sauce and Pioneer sauce.

Wagon-Wheel
A display of assorted cheeses and meats with choices of fresh seasonal fruit, nuts, crackers, olives, spreads. You mix and match. Let’s talk cheese.

We take pride in cooking with the freshest available products.
Pioneer Catering can help you create your menu to your liking. The menu lists our most popular items, however, our buffet tables can be adjusted to your needs.
​We can accommodate parties from small groups of a minimum of 50 guests to large wedding or Christmas parties of 300 or so.
Our typical buffet prices range from about $30 per person or more depending on selected entree items and the number of guests. We can accommodate most individual party selections.
